In the heart of Plaza del Carmen, the rooftop of the Thompson Hotel Madrid hosts Makáá, a restaurant by Grupo Lamucca that opens at the end of 2025 featuring fire cooking, 360-degree views, and a menu that highlights farm, garden, and sea produce.

Since the end of 2025, Madrid's centre will have a new gastronomic viewpoint. It is called Makáá, located on the rooftop of the Thompson Hotel Madrid in the central Plaza del Carmen, and belongs to Grupo Lamucca. Its name means 'charcoal' in an African language, and the entire concept revolves around fire: visible embers and wood cooking meats, fish, and vegetables without hiding the produce.

The group's executive chef, Dani Álvarez, has developed the menu alongside Andy Boman, known as El Flaco. Together, they have created a direct cuisine supported by three territories: the farm, the pantry, and the sea. "Everything comes from the farm: that is our cornerstone," Álvarez explained about a philosophy attentive to origin and quality. This intention is perceived from the welcome, which consists of assorted breads, smoked butter, and bird and olive pâtés.

However, the garden also occupies a central place. The menu includes roasted tomato prepared like steak tartare, leek with romesco sauce, grilled vegetables, or cauliflower with beurre blanc. "The grill does not belong only to meat," they assert from the restaurant, thus offering options for vegetarians and vegetable lovers.

Makáá presents itself as a space where Madrid suddenly appears. The 360-degree views remind you that you are in one of the city's liveliest spots, although the atmosphere invites the opposite: to slow down and extend the after-meal conversation. The rooftop combines a laid-back and cool environment with the possibility of enjoying a cocktail with friends or reserving for a more formal meal.

Among the recommendations to start, the fried rice nigiris stand out, a light yet tasty bite. There are also snack options like Santoña anchovies with brioche and coffee butter, or the tarantelo of red tuna from almadraba. For drinks, sommelier Brian suggests wines that pair with each dish, and the culinary experience manager, Alina, advises on the menu with professionalism and warmth.

The space features live music that complements the atmosphere, and the carefully curated decor completes an experience that, according to those who have already tried it, "you know you've made the right choice by how they treat you from start to finish."

Makáá opens from Monday to Sunday, for both lunch and dinner, and accepts reservations through the hotel website or by phone. The average price is around 50-60 euros per person, although it depends on the choice of dishes and drinks. It is advisable to book in advance, especially on weekends and during sunset hours, when the views are most spectacular.

For residents of the Community of Madrid, this new rooftop adds to the leisure and gastronomy offerings of the capital, providing a different plan in the city centre, with a focus on fire cooking and an atmosphere that invites you to disconnect from the city's hustle and bustle.
