In a message published on their social media, the team at the venue, located on Avenida del General Perón, remembered Ron as "a man committed to life and to people" and "a great friend whom we will miss immensely."
"What Paco Ron achieved throughout his professional life has been recounted many times: his role in the renewal of Asturian cuisine, his early steps in the original Viavélez in Asturias, the Michelin star, or his concept of gastronomy. But none of that serves to describe who he really was," reads the text shared by the Madrid restaurant.
Paco Ron moved to Madrid after managing the Taberna de Viavélez in El Franco (Asturias), where he achieved the first Michelin star in western Asturias in 1999. In 2007, he opened a restaurant in the capital named after the village he felt was his place in the world. Three years ago, Ron decided to retire and transferred the business to one of his most loyal waiters. The venue continues to operate at full capacity, but without forgetting the mark left by its founder.
"The chef who opened Viavélez, but above all, our friend, great companion, tireless worker, demanding leader, and exceptional human being," the statement adds. The message concludes with a simple "Goodbye, dear Paco."
Also from the Taberna Viavélez, the original venue that Ron managed in the Asturian town of El Franco, they wanted to say goodbye to the chef. The team led by Pablo Bedia published a message thanking him "for your legacy and your teaching, for your smile and your friendship." "Eternally grateful for welcoming us and for that tiny seed compared to your great work, but so important to us. An honour and a pride to have met you on our path and to have enjoyed you a little. We will always remember you, friend," they stated.
Paco Ron is considered a reference in Spanish cuisine, especially for his contribution to the renewal of Asturian gastronomy. His death has prompted numerous expressions of sorrow in the sector. The Viavélez restaurant in Madrid remains open, maintaining the legacy of its founder.
