The Bibì e Bibó ice cream shop, with Italian-Spanish roots, produces artisanal ice creams in Madrid using local ingredients and top-quality Italian products. Among its most popular flavours are mango, raspberry, and the original palmeritas ice cream.
Andrea, the master ice cream maker at Bibì e Bibó, mixes cherries and lime in the ice cream shop's workshop. It's not just any flavour: it's the latest creation from a family business that has turned artisanal ice cream into a phenomenon in the capital. The recipe, like all of theirs, starts with fresh fruit and a philosophy that crosses borders: Italian tradition with the best local product.
An Italian-Spanish family at the helm of the workshop
Bibì e Bibó was born from the dream of a family that crossed Italy to learn from the best ice cream masters. "They went to Italy to learn and returned to Spain to teach their children Sofía and Carlo, who now run the ice cream shop," explains Andrea. The central workshop, located in Madrid, produces limited batches daily that are distributed to their shops in the capital and Barcelona.
The quality of the raw materials is their hallmark. "We choose the best pistachio from Sicily, hazelnuts from Piedmont, and the milk is from the Sierra de Madrid," she details. This combination of local products and excellent Italian ingredients defines each cone. For the Madrid resident, this means ice cream that truly tastes like fruit, without artificial colours or flavours.
Flavours that innovate without losing essence
Mango and raspberry are the best sellers, but the surprise comes with the palmeritas ice cream. "We crush the palmeritas and make ice cream; kids love it," says Andrea. The colours are not bright because "they are the colours of real ingredients." A commitment to naturalness that is also evident on the palate.
In addition to tubs and cones, Bibì e Bibó offers the panino: a warm brioche filled with ice cream, a temperature contrast that drives customers wild. There’s also the affogato, vanilla ice cream drenched in freshly brewed coffee. Even dogs have their version: a yogurt ice cream with peanut butter and fruit. For the reader in Madrid, a perfect excuse to indulge this summer without leaving the city.
International expansion and local roots
With shops in Madrid and Barcelona, Bibì e Bibó is already looking across the Atlantic. Its next opening will be in Mexico, but without losing the artisanal character that defines them. "Ice cream tells a story of tradition, quality, and creativity," summarises Andrea. A story that, for now, has its epicentre in Madrid and invites locals to discover that artisanal ice cream is not just a dessert, but an experience.
If you haven't tried the ice cream panino or the palmeritas one yet, the Bibì e Bibó shops are waiting for you in various areas of Madrid. Just be prepared to queue: word of mouth has already taken effect.
